In creating our menu's for Smokin Thighs Restaurant & Truck, we decided that our customers should not only get a delicious selection of chicken but we could eliminate most of the competition by NOT frying them. In fact, we choose not to put a fryer in the truck at all! Our process starts by apple wood smoking each piece of chicken for a selected amount of time followed by flashing them in one of our many temperature rated bbq based sauces and finishing them on the grill. Smoking and grilling them give our wings that delicious backyard style that will surly tell your taste buds I want more!
